Okay, now for a new series of articles, “5 minute recipes”. Every now and again you just can’t be bothered to spend a long time preparing and cooking a meal. You just want something tasty and quick. This is where “5 minute recipes” comes in. They’ll be quick, easy to prepare and tasty.
1. Eggy Noodles
A quick noodle dish that’s tasty and filling, perfect for a quick snack before going out.
Ingredients
1 * 150g pack of Amoy”Straight to wok” medium noodles.
1 * handful of frozen peas (I like Birds Eye as I used to do some GIS work with these guys)
2 * eggs, fresh/organic/free range if you can, we’re lucky!
Soy Sauce, decent brand, dark not light.
Put a little oil in a small pan and heat. Drop the handful of frozen peas into a bowl (I use the bowl I’m going to serve the food in to save washing up) and fill with hot water (not boiling). Stir the peas with your hand until the water goes cold. Once cold (takes a few seconds) empty, then refill the bowl with hot water. You may have to repeat this a couple of times until the peas are sat in warm water (takes less than 1 minute). Leave the peas sat in warm water.
The oil in the pan will now be hot, open the pack of noodles and drop into the pan (it sometimes helps to break the noodles apart a bit in the pack before opening otherwise they drop into the pan in one big lump). Stir-fry these for about 3 minutes. Next, with the noodles still cooking, drain the peas and add them to the noodles (give the bowl a quick dry). After a quick 1 minute stir frying, crack the 2 eggs into the pan and give it a good stir (~30 seconds) so the egg cooks. Now add soy to taste, I like to add quite a lot! One more quick stir then serve in the bowl.
Eggs Noodles, tasty, filling and quick. I may not be the next noodle king but I reckon this recipe takes some beating!
